Ingredients
  

  • 2 cups whole milk
  • 2 tbsp lemon juice or vinegar to curdle the milk
  • 1/2 cup raw honey
  • 1 pinch salt

Instructions
 

1. Make the Curds

  • Pour the milk into a saucepan and heat it gently over medium heat. Do not let it boil—heat until it’s steaming and just about to simmer.
  • Add the lemon juice or vinegar to the milk, stirring slowly. The milk will begin to curdle as the curds (solids) separate from the whey (liquid).
  • Remove the saucepan from the heat and allow it to sit for 5-10 minutes.

2. Strain the Curds

  • Line a strainer or colander with a clean cloth or cheesecloth. Place it over a bowl to catch the liquid whey.
  • Pour the curdled milk through the cloth to separate the curds. Let it strain for about 10-15 minutes, until the curds are thick and soft.
  • Sprinkle with a pinch of salt, if desired, for flavor.

3. Serve with Honey

  • Transfer the curds to a serving bowl or plate.
  • Drizzle generously with raw honey for natural sweetness.
