- 2 cups whole milk
- 2 tbsp lemon juice or vinegar to curdle the milk
- 1/2 cup raw honey
- 1 pinch salt
1. Make the Curds
Pour the milk into a saucepan and heat it gently over medium heat. Do not let it boil—heat until it’s steaming and just about to simmer.
Add the lemon juice or vinegar to the milk, stirring slowly. The milk will begin to curdle as the curds (solids) separate from the whey (liquid).
Remove the saucepan from the heat and allow it to sit for 5-10 minutes.
2. Strain the Curds
Line a strainer or colander with a clean cloth or cheesecloth. Place it over a bowl to catch the liquid whey.
Pour the curdled milk through the cloth to separate the curds. Let it strain for about 10-15 minutes, until the curds are thick and soft.
Sprinkle with a pinch of salt, if desired, for flavor.
